While tippling at the Alaloa Bar just off the main lobby of The Ritz-Carlton, Kapalua in October, I asked bartender Mark Yoshino if he had a favorite drink he creates for his bar and lounge guests during the holiday season. His preference was the “Lava Flow.”

This libation uses a base of Fresh Blendz Pina Colada mix, Maui light rum, creme of coconut, and fresh banana, followed by a swirl of strawberry puree. Maui dark rum floats on top with a garnish of pineapple chunks. It appears as if red hot lava is moving up through the white Pina Colada mix, while the float of dark rum shows off the volcanic eruption.

LAVA FLOW

1 oz. Maui rum
½ oz. Banana liqueur
Strawberry puree
Blend with cream of coconut, pineapple juice and crushed pineapple
