1 oz freshly-squeezed lime juice
2 oz simple syrup
3 oz Mount Gay Eclipse rum
4 oz water (2 oz cold water with the remaining water coming from the melted ice)
2 dashes Angostura bitters
In a mixing glass, add lime juice, simple syrup, rum, water, and Angostura bitters. Shake until well blended. Strain into an ice-filled goblet and garnish with freshly-grated nutmeg.
An old poem for creating Bajan (Barbados) rum punch; “One of sour, two of sweet, three of strong and four of weak, a dash of bitters and a sprinkle of spice, served well chilled with plenty of ice.”
