Escape the heat with one of these breezy summer drinks. This bubbly punch is just right for cocktail hour.
3 tablespoons grenadine
3 tablespoons Cointreau
2 tablespoons brandy
1 3/4 cups champagne
Raspberries, apples, or other seasonal fruit
Fill a small ice bucket halfway with ice. Pour grenadine, Cointreau, brandy, and champagne over ice. Stir gently, and ladle punch into 2 wide-mouthed stemmed glasses. Garnish punch with raspberries, apples, or any other fruit in season.

1/3 cup pineapple juice
1/4 cup pink grapefruit juice
2 ounces gin

A tart and fruity bourbon-based cocktail with peach and blackberry
4 thin slices peach
2 large sprigs mint
1 1/2 teaspoons honey
1 tablespoon fresh lemon juice
2 ounces bourbon
In a double old-fashioned glass, combine 2 peach slices, 3 blackberries, mint, honey, and lemon juice. Mash gently with the back of a spoon until fruit releases juices. Add bourbon, remaining peach slices, and remaining blackberries. Fill glass with ice and top with seltzer.
Juicy watermelon and cucumber plus vodka add up to a refreshing summer cocktail. Lime juice and honey provide the right balance of tart and sweet to this festive drink.
5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons honey
2/3 cup vodka
Cucumber slices, for garnish
Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices.
