Calafate Sour

2 oz Capel Pisco
1 1/2 oz calafate juice or puree*
1/2 oz simple syrup
1/2 oz lemon juice
1 Tbsp pasteurized egg white
Add all the ingredients into a cocktail shaker and energetically shake for about 15 seconds. Filter with a fine strainer and pour into a flute with ice.
*1 or 2 Tbsp of calafate puree or syrup can also be substituted.
